In Cathy’s class, I learned the importance of food combinations. I thought I knew about healthy eating but I had no idea about correct food combinations and it became very clear to me why eating certain foods left me bloated even after eating healthy food.

After the class, I was motivated to incorporate more raw foods into my daily menu, for the fall and winter as well. I learned to regain confidence in my eating and even increased my exercise. I now have double the energy I had before… and I am feeling great about the way my body has transformed!

I want to share what's been going on with me. The excitement you saw in me when I left Friday carried through my weekend. On Saturday I bought groceries to prepare the fish, bok choy salad and of course the mango parfait. I told my girlfriend Jennifer that I have a new relationship with my food processor :-)

I have been ADDICTED to homemade cakes, muffins, etc. After eating these meals, my body isn't asking for that junk. I am amazed at the drastic change, like I flipped a light switch. Usually when I cut out those foods my body seems anxious and in withdrawal for about 7-10 days. I am excited about having the soup for lunch tomorrow--I've already cleaned the veggies.

Donatella and Cathy, thank you again for a wonderful evening. I will look at the schedule and figure out when I can bring some other health-conscious friends to your cooking class.

Thank you, thank you, thank you for such a wonderful evening last night. The atmosphere was warm and gracious and the class so fun and informative. I have just finished eating my first Vitality meal. I made the bok choy salad, my leftover trout and the mango parfait. The parfait is AWESOME, you guys! I have just found my new summer treat. I even brought down my wine glasses to do it properly. I've eaten one already and suspect that at least one other will not make it through the night. I can't wait until my other mangos and avocados ripen so that I can made the avocado/walnut salsa wrapped in collard green leafs. So, I am very inspired and ready to eat this way all summer. I'll check out the rest of your recipes on your website. I can see now that I'll have to take your class at least once a season, as I'm sure you'll have all kinds of new ideas for the fall and winter as well.
